Downtown Prior Lake soon will get a dose of fresh, healthy food.
Camille Myser, a Prior Lake resident, will open Jazz Company Café in March at 4616 Colorado St., in the lobby of Premiere Dance Academy.
Myser said she wants to offer quick, yet healthful, food choices for residents and dance clientele. She started planning the café two years ago after getting the blessing of Premiere Dance owner Dawn Schulberg.
The café, currently under construction, will include a fireplace and outdoor seating. Myser said she’s building an online menu so customers can view, order and pay for their food “while sitting at their desks.”
The café will have a separate express line for made-to-order lunch and dinner entrees. The menu will focus on fresh, seasonal items and daily specials. Myser has plans for a made-to-order pasta bar, house-made dressings, espresso drinks, milkshakes, smoothies and Italian gelato.
Myser said her Italian heritage motivated her to introduce Prior Lake to homemade gelato.
“You haven’t truly enjoyed ice cream until you’ve tried real gelato,” she said. “The flavors stay alive in your mouth until the last bite.”
One of Premiere’s dancers came up with the café’s name, Myser said.
“I was just trying to affiliate us with the academy, because obviously we’re going to be doing a lot of business with them,” she said.
Myser plans to add live music – “a one-man-band kind of thing” – to the café’s offerings in late spring or early summer.
The café will be open seven days a week, with hours soon to be set.
