I found an excellent, relatively low-fat and low-sugar cookie recipe that I just had to share! I used a recipe from my neighbor, but I modified it by replacing half the flour with almond meal (delicious, and it keeps the cookies soft!) and omitting granulated sugar. Believe me, you won't miss the white sugar!
Here's the recipe:
Chocolate Chip Cookies
4 Tbsp. butter, softened; 4 Tbsp. applesauce (unsweetened)
1 cup packed light brown sugar
1 egg
1 tsp. vanilla
1 1/4 cup all-purpose flour
1 1/4 cup almond meal
1/2 tsp. baking soda
1/2 tsp. salt
1/3 cup fat-free milk
1/2 package semisweet chocolate morsels
Beat butter and sugar in medium bowl until fluffy; beat in egg and vanilla. Mix in combined flour, baking soda and salt alternately with milk, beginning and ending with dry ingredients. Mix in chocolate morsels.
Drop cookies by tablespoonfuls onto greased cookie sheets. Bake at 375 degrees until browned, about 10 minutes. Cool on wire racks.
