I would like to see two restaurants in Prior Lake. Punch Neapolitan Pizza and Cassis, a modern bistro I ate at in Chicago and recently found out has a store in Eden Prairie.
I'd love to recruit First Watch to Minnesota. It's a breakfast and lunch cafe I've been to in Florida and Kansas. They use a ton of fresh fruit, from kiwi-strawberry crepes to fresh-squeezed orange juice, and servers bring a pot of coffee directly to your table. What's not to love?
As far as fast food goes, it would be good to see a Fazoli's italian restaurant chain pop up here. (Who doesn't like all-you-can-eat breadsticks?) or a Sonic Drive-in so I could swing by and grab a cherry-limeade and a corn dog. Yum.
I also think Chipotle or Panera Bread could do well in Prior Lake.
I find it ridiculous that market surveys have said that Prior Lake can't support a chain restaurant. We happened to be at the Chili's in Shakopee the night it opened and it was slammed... we go on occasion (would go more if it was actually IN Prior Lake) and frequently see neighbors and friends there.
How about something like a Fuddrucker's? An organic restaurant like French Meadow would be nice too. We'd definitely patronize a Mexican family restaurant as well. Bummer to see all the restaurants going to Savage, Burnsville or Shakopee!
My family lives in a small Minnesota town (population: 2,500), and whenever they visit me in Minneapolis, they usually want to make a trip to Chipotle. They sometimes make special requests for me to pick up a burrito and chips and guacamole when I'm going home for a weekend.
Panera Bread is one of my favorite chain restaurants. Their chicken salad sandwiches are supurb. I can't often pass up the French onion soup, either. And if you like pastries, I think you'll find that Panera Bread can more than accomodate you. Try the short bread cookies.
Who needs chain restaurants when one of the best eateries in the Twin Cities is already in Prior Lake? If I could get away with it, I'd eat at Perron's Sul Lago for dinner every night.
I say skip the cookie-cutter restaurants that you can find anywhere and give us more signature cafes and top-notch bistros.

Ruth Anne has a point. You will likely find more diverse, interesting food at a non-chain restaurant. For those who find chains comfortable, consider being an adventure-seeker once and try a new restaurant.
My husband and I have a growing list of restaurants we want to visit. Our criteria are simple: 1.) it can't be part of a chain and 2.) it has to be a restaurant that we've never been to.
Each week, we try to mark one eatery off of our list. This weekend, we went to Mickey's Diner in St. Paul. We also broke a rule and returned to the Loring Pasta Bar in Dinkytown. We made the exception because we had never dined there together.
We should compare lists sometime. Some of my favorites are The Sample Room in Northeast and Three Fish by Lake Calhoun. While we like to try new places, we also like to revisit those spots where we've gotten good food and good service -- as well as telling other folks about them.
Put Jimmy's Food and Cocktails (www.jimmysfoodandcocktails.com) in Minnetonka on your list, too. They've recently updated the menu so I can't speak to all the offerings, but I can tell you that the shrimp, avocado and grapefruit salad, the ahi tuna martini and the four-cheese penne pasta will tempt you back. They also make a mean crabcake. Sit at the bar and ask for Tony. He'll treat you right!
A restaurant like any of these would be a welcome sight in Prior Lake.
I agree with the earlier comment about a Mexican restaurant being needed. I would have definitely frequented one had there been one when I lived in Prior Lake.
There's a great Thai place in Savage, Spice Thai Cuisine, which is just around the bend from Prior Lake -- a five minute drive.
Not that a Thai place that serves a great bowl of laksa wouldn't be welcome in Prior Lake. I've tried some of the soups at Spice and, while good, none of them taste like the laksa I got while I was in Thailand.
I've tried to make it at home, once with spices I brought back from Thailand and once with ingredients and spices from the ABC Asian store in Prior Lake, but it still wasn't the flavor I remember and crave.
My sister and my daughter and I went for vacation about five years ago. We were in Bangkok and Chiang Mai. We visited temples, went spelunking, rode elephants, toured villages, shopped and ate and ate and ate.
We also took a cooking class at the Four Seasons resort we stayed in at Chiang Mai (my sister works for Four Seasons Hotels and I used to be her travel companion till she went and got married!)
Plus, Francis Ford Coppola was there at the same time and we had dinner at his table one night -- after he and his party vacated it!
How about an old-fashioned soda fountain downtown? Or a gourmet candy shop? I'm thinking of the little stores in Stillwater that seem to be so popular.
